Medical nutrition (diet) for pancreatitis of the pancreas

Diet therapy for pancreatitis is no less important than conservative treatment with medications, and there is a logical explanation for this. The inflammatory process in the pancreas (PG) disables the organ, that is, it stops producing pancreatic juice, without which the final digestion of fats, proteins and carbohydrates in the initial part of the intestine is impossible in principle, and therefore normal nutrition is also impossible.

In addition, the pancreas is part of the endocrine system and is responsible for the production of hormones, such as:

  • insulin and glucagon, which regulate sugar metabolism;
  • lipocaine - fats, as well as bicarbonate ions that neutralize the acidic environment of gastric juice.

An increased load on the inflamed area of the digestive canal may result in a surgical operation to remove its necrotic parts. This development of the disease is extremely undesirable. Therefore, at home, nutrition for pancreatitis is designed to provide the pancreas with all types of sparing: mechanical, chemical, thermal.

Thanks to a special diet:

  • the functioning of the digestive system improves;
  • the intestines maintain their integrity;
  • fewer toxins are formed that poison the body;
  • the pancreas stops “devouring” itself;
  • enzyme production returns to normal;
  • pain is relieved;
  • the development of various complications is prevented.

This is where the principles of diet for pancreatitis follow:

  1. Food can be steamed; in extreme cases, it can be boiled and baked, but the first option is preferable, as it is healthier and retains more vitamins.
  2. Hot or cold food aggravates the disease, so meals should be in the range of 20-50°C.
  3. Eat 5-6 times a day. Portions are preferably small to avoid overeating and increasing the load on lifespan.

What not to do with pancreatitis

Within 3 days after an exacerbation of the disease, therapeutic fasting is recommended. From the 4th day, the patient follows table No. 5 according to Pevzner, which is also indicated for acute and chronic cholecystitis, gallstones and cirrhosis of the liver. Without a balanced diet, it is impossible to cure gastritis, diabetes and other diseases of the gastrointestinal tract.

In case of inflammation of the pancreas, foods that activate secretory function are prohibited, namely:

  • lard, vegetable oils;
  • fresh bread, pastries;
  • lactic acid products from fat milk;
  • candies and other sweets;
  • alcohol;
  • sparkling water, juices;
  • pickles, marinades;
  • rich broths from fatty meats;
  • from vegetables, onions, garlic, chili peppers;
  • citrus;
  • corn, both fresh and canned;
  • watermelon;
  • melon;
  • nuts;
  • ginger root;
  • seasonings;
  • millet.

Chemical composition, trace elements and vitamins in buckwheat

The taste and nutritional properties of buckwheat directly depend on the variety and quality of the product itself. Buckwheat goes on sale in four production forms :

  • groats - whole, uncrushed grain, cleared of the surface shell;
  • prodel (cut) - peeled coarsely chopped grains;
  • Smolensk groats - finely ground grains;
  • buckwheat flour.

In addition to the usual dark or light brown grains, green (uncooked) buckwheat is gaining popularity . It is considered a healthy and dietary product; it is also used for preparing cereals and other dishes, but it costs two or more times more than regular processed cereals. In terms of usefulness for the body and availability when purchased, the most suitable is considered to be kernel cereal, as an alternative - prodel.

The energy value of whole grain cereals in raw form varies from 308 to 335 kcal. The glycemic index ranges from 50-60 units. During heat treatment, the nutritional value of the product decreases and is :

  • 101 kcal/100 g - boiled in water without salt and oil;
  • 104 kcal/100g - steamed in hot water.

What can you eat if you have inflammation of the pancreas?

Dishes from the following approximate list of permitted products are prepared by chopping on a grater or in a blender. Among them:

  • soups in vegetable broth, seasoned with sour cream, including butter, vermicelli, eggplant, pumpkin, carrots, zucchini and potatoes;
  • porridge from semolina, oatmeal, rice and buckwheat;
  • hard cheeses;
  • skim milk and the same cottage cheese;
  • vegetables and fruits;
  • crackers, stale bread;
  • dietary varieties of meat and fish.

Beneficial properties of buckwheat

Cereals contain B vitamins, which promote restoration and healing of nails, skin and hair, and strengthen vision. Buckwheat contains proteins consisting of amino acids necessary for the body. There are iron, copper, manganese, molybdenum, calcium and other useful trace elements. The fiber contained in this cereal has an effective effect on cleansing the intestines.

An important advantage of buckwheat is that it can be grown without fertilizers, nitrates or pesticides, and without being subject to genetic modification. The plant does not need this; it gets rid of weeds on its own. Therefore, buckwheat is considered a safe and environmentally friendly product.

Diet for different forms of inflammation

After an attack of acute pancreatitis, namely for 3 days, complete fasting is necessary. Its goal: to stop the production of juice that digests the pancreas itself. During this time, the signs of the disease subside. To neutralize the acidic environment of the stomach, it is recommended to drink alkaline mineral water. You can only eat dishes in the form of puree or soufflé.

Chronic pancreatitis is characterized by rapid loss of proteins. To replenish the body’s protein reserves, they must be constantly included in the diet; a third should be of plant origin. Dairy products can be taken both in the morning and in the afternoon. The source of energy remains carbohydrates contained in potatoes, crackers, pasta and cereals. These recommendations are also observed when organizing holiday feasts.

How to cook buckwheat correctly

Undoubted beneficial qualities and properties make it possible to include cereals in the diet immediately after an exacerbation. To ensure that the beneficial properties do not harm the body during illness, you have to adhere to a number of recommendations in preparation.

When the inflammatory process of the pancreas worsens, when preparing buckwheat porridge, it is necessary to cook the whole grain for a long time, achieving viscosity. Instead of whole grains, it is permissible to use crushed buckwheat. This version of the cereal contains fewer vitamins, but absorption by a weakened body will occur easily.

In both periods of the disease, buckwheat should be thoroughly washed and sorted, making sure to note the absence of uncleaned kernels. The peculiarity of cooking buckwheat is that when the grain is left in cold filtered water overnight, much more useful substances are retained than during regular cooking. The speed of cooking porridge will be much higher.

Folk remedies

A herbal mixture that contains the following plants, taken in a 1:1 ratio, relieves inflammation well;

  • galangal (root);
  • rose hip;
  • green bean shells;
  • horsetail;
  • St. John's wort;
  • dill (seeds);
  • yarrow.

You need to add a little celandine to them. Take the mixture (2 tbsp), pour 500 ml of boiling water, leave for 8 hours. Drink 1/3 glass 3 times a day 30 minutes before meals. The treatment course lasts 6-8 months. In case of exacerbation, it is necessary to increase the plant material to 3 tbsp. l.

Contraindications

Despite the common misconception, it is not advisable for diabetics to often eat buckwheat porridge, as well as during exacerbation of pancreatitis. The glycemic index of this product is quite high - 50 (for comparison: GI of pearl barley - 22).

The starch contained in buckwheat can increase blood sugar, creating additional stress on the target organ. Do not include buckwheat dishes in your menu if you are allergic to protein.

  • accelerates cell regeneration;
  • normalizes intestinal function thanks to fiber;
  • replenishes the body with vitamins E, PP, D, microelements: potassium, phosphorus, iron.

Buckwheat normalizes intestinal function thanks to fiber.
It is important that buckwheat contains B vitamins, which ensure metabolic processes in the body, including fat and carbohydrates.

Cereals are harmful to people with protein allergies. If you eat buckwheat daily and in large quantities, the starch contained in it can increase the level of glucose in the blood, which is extremely undesirable for pancreatitis.
